I fought with temperature control for 20 years using all the charts and doing all the math. But charcoal comes in different sizes. Pots are different sizes. (I have from 5" to 16".) I finally ran across a way to control heat without the Masters degree in math. Use one ring of charcoal under your oven at the outer edge of the oven (no coals under the middle) and one ring around the outer edge of the top. This will give you approximately 300 degrees. Add a second 1/2 a ring inside the first on the top and that increases the internal temp to approximately 350. Fill out the second ring to make 2 full rings on top for 400 degrees. This works no matter what size oven and no matter what size coal. If you use wood coal use about 3/4 as much and be ready to replace it twice as often.
